Tacos Tuesday (...ok, Wednesday...)

There is little I like more than a delicious lime induced taco. I mean who doesn't love a good taco right? You will probably notice measurements are a little vague - That's the great thing about tacos, you can kind of make it up as you go along, but you can use the below as a loose guideline! These measurements will feed 4 people three small soft tacos each.

Salsa - What you need:

•4 - 5 on the vine tomatoes
•1 lime
•Handful of cilantro (coriander)
•1 red onion
•Salt & pepper
•2 small cloves of garlic
•jalapeno {for a kick}

What you need to do:

1.Chop up the tomato into 1/2cm sized chunks
2.Chop the onion into tiny chunks
3.Chop coriander, coriander is very flavoursome so the smaller the pieces the better
4.Add all ingredients to a bowl and squeeze like over the top
5.Throw in the crushed garlic, and as much jalapeno as you can handle
6.Season with salt and pepper and mix together
7.Try some, it's a tasty treat!

Guacamole- What you need:

•2 ripe, slightly squishy advocados
•1 clove of garlic
•1 chopped tomato
•1 red onion
•Salt&pepper
•Lime juice

What you do:

1.Cut advocado in half and scoop out flesh, mash in a bowl using a fork. You can either make chunky or smooth guac, whichever is your preference.
2.Chuck in finely chopped onion, tomato and crushed garlic.
3.Mix together and season to taste with lime juice and salt & pepper.
4.I've heard a trick that if you put the avocado stone I'm the middle of the bowl it stops the advocado going brown... {Sneaky trick: What I usually do is I make a little bit more salsa, then I take a big scoop of it  and combine it with the advocado}


The Taco Shell

We like to use corn soft taco shells. This is mainly due to my boyfriends gluten allergy, but also because soft taco shells are the yummiest. You can heat them in the microwave by putting kitchen towel in between them. 3-4 tacos in the microwave take around 50 seconds. If you aren't a fan of soft taco shells or you want a healthy alternative, butter lettuce works spectacularly as a wrap.

Other bits and bobs

Chunk of lime to squeeze over finished taco, sour cream and refried beans - 1 can of refried beans will suffice, just heat them in the microwave and dollop it onto the taco shell before stuffing them full of your salsa & guacamole goodness. Kapow!
